The art of purchasing (or procurement) is not only closely linked to the finance function within the hospitality sector, but is sometimes found to be a direct line of responsibility for the finance leaders. Sometimes called ‘materials management’ this department is often guided by corporate purchasing specialists who may control the buying patterns of an operation by providing pre-agreed, recommended supplier lists, who have negotiated commitment levels of price, delivery and product/service standards for a group in a large geographical area. Purchasing professionals could also be responsible for arranging the ‘whole of life’ costings for asset purchase decisions and/or for negotiating contracts to buy utilities or credit card commissions for years at a time. It is not always a matter of keeping the business stocked of food and beverage.
